4 Cheese Manicotti


This is Gracie and her Valentines day presents. She had such a great day. She got a white rose, and 2 stuffed frogs! She got a box of chocolates too! Isn't she beautiful? Her wonderful dad got her a sweet jacket with hearts on it - perfect for Valentines day.
Speaking of her dad, my rockstar husband got me a dozen red roses and some chocolate! I just love him so much!

The manicotti turned out super yummy. Here is the recipe if anyone wants it. (I totally just made it up, so I am sure it will work if you want to mix and match ingredients!)
4 Cheese Manicotti
1 pkg. manicotti noodles (12 oz.)
1 carton Cottage cheese (14-16 oz.)
4 oz. cream cheese
1 cup shredded cheddar cheese
1 ½ cup parmesan cheese - divided
2 eggs
¼ cup dried basil
1 tsp. sugar
1 jar pasta sauce
In large bowl combine cottage cheese, cheddar cheese and the cream cheese. Mix well. Add the dried basil, the salt, and the pepper. Put in refrigerator.
Cook manicotti noodles as directed on package. Rinse in cool water.
Add sugar and 1 cup of the parmesan cheese to the cheese mixture.
Pour some of the marinara sauce into the bottom of a 9x13 pan. Stuff each noodle with the cheese mixture. Place in dish.
(If you have any cheese mixture left over after stuffing all the noodles, you can spread over the top of the noodles)
Pour remaining sauce over the noodles. Top with the rest of the parmesan cheese.
Bake at 350 degrees for 25-30 minutes.
